Who is Niall Hill

Niall Hill is Executive Chef and Director of Food at The Butler’s Pantry. This involved the design and creation of a full range of handmade food to the ten shops and event business that is the Butler’s Pantry. Now with ten shops and purpose built kitchens in Bray Hill directs a team of 40 including Chefs and Bakers in the creation of over fifteen thousand hand-made products a week.

Over the years Niall has been a regular contributor to numerous food mediums including; Food and Wine magazine, Sunshine Radio Food piece. Niall is a Leading Guest Chef to the Miele Gallery and a Judge for the U.K. and Irish Great Taste Awards.

Originating from Dunlaoghaire Hill has just project managed a full property revamp in Blackrock where he lives with his wife Joanne and two young children (Nyah 7 and Zuri 1), Hill has always had a passion for all things food! First training with French Chef Guy Urbin for two year Hill then worked with Colin O’Daly before leaving for Toronto in 1992. There he worked in the best restaurants, including Herbs Restaurant, The Royal York Hotel, Otago Restaurant, Lakes Bar and Grill and the Left Bank Restaurant.


Returning home after five years, Hill joined the O’Flynn family at their award winning Country House Hotel, Rathsallagh House for three years where they created farm to table cuisine.

Hill then joined The Butler’s Pantry in 2000 as Head Chef and within a couple of years was invited to join the Board of Directors and since then has been involved at every stage of the building and growing of the company.

Hill has been awarded many awards over his 25 year culinary career including; six Great Taste Awards, Best in Fresh Awards, Irish Food and Drink Industry award, Country House of the Year Award ,Gold Platter Awards in Canada.

A lover of all things food, Hill believes in simple food using the very best in seasonal ingredients . When he is not toiling the soil or creating amazing dishes at The Butler’s Pantry, Hill is running marathons.
